HARVEST 2004 "Millesimé"

Straw yellow color with golden reflections. Fine scum and good evolution in the glass. Very elegant cava with aromatic richness where notes coming from the barrel stand out: toasted bread, light smoked, tobacco, … It evolves and we find notes of moka, toasted, nuts, … With a structured mouth pass, frank, where the carbon gas is very integrated and long put-taste. We emphasize the notes of maturity, complexity and evolution of the long aging cavas.

Elaboration and breeding

We use two cork stoppers to make each bottle. The 1st fermentation and aging of the base wine is in barrels on its lees for 12 months. The 2nd fermentation in the bottle is with the first cork stopper, in horizontal position to the rhyme and with a rearing of 140 months (+11 years) in traditional bottle with their mothers under the CAVA. In MESTRES, in the cellars of long aging (more than 30 months), it is carried out rhyme removed to favor the process of autolysis of the yeasts, achieving an improvement of structure and complexity of our Cava Wines. Finally, after the disgorgement (extraction of the mothers, manual process bottle by bottle) we put the second cork stopper and its identification plate. MESTRES has always printed on the label the date of disgorgement. We continue to make artisan cellars and to be faithful to the traditional aging method.

HARVEST 2004 "Millesimé"

Straw yellow and golden color. Carbon end and with good evolution to the cup. Very elegant cava with a great aromatic richness, where we can find a golden apple and a perfect harmony with intense and complex notes of toasted bread and nuts thanks to its long aging and noble wood. The step through the mouth is powerful, mature, balanced and very structured, with a very good integration of carbon gas. Voluminous, surrounding and velvety to the palate, it concludes in a long and very persistent finish.
