Straw yellow color with greenish reflections. Fine foam and good evolution in the glass. Very elegant cava with aromatic richness where notes of white fruit -white perch, reineta apple- and citrus -pomelo, orange peel- stand out. With a step through the mouth structured, frank, where the carbon is very integrated and long put-taste. It emphasizes the freshness of the notes of fruits combined with the notes of aging and maturity. It is a cava easily admissible at any time of the meal.

Elaboration and breeding

We use two cork stoppers to make each bottle. The 1st fermentation to obtain the base wine is at a controlled temperature of 14-15 ºC. The 2nd fermentation in the bottle is with the first 100% natural cork stopper, in horizontal position to the rhyme i with a rearing of more than 40 months in the traditional bottle with its lees, under the CAVA. In MESTRES, in the cellars of long aging (more than 30 months), rhyme removals are carried out to favor the process of autolysis of the yeasts, achieving an improvement in the structure and complexity of our Cava Wines. Finally, after the disgorgement (extraction of the mothers, manual process bottle by bottle) we put the second plug of natural cork, and its identification plate. MESTRES has always printed on the label the date of disgorgement.

The first cava brut nature without sugar addition (1945)

Attractive pale golden yellow. Deep and delicate aromas of aging where floral touches and white fruit blend with elegant nuances of its long aging (vanilla, honey, bread finished cooking) and balsamic notes resulting from its aging in barrels. Fine and integrated bubble. The palate is structured, live, fresh, long and persistent. In the position-taste we find notes of pastry, toasting, balsamic, jams … which make it very pleasant to the palate.

The "Rose" by Mestres

Good color intensity Carbon dioxide is detached finely. At nose combines floral notes and the ripeness of red fruits, we also find the aromas of long aging with mothers (pastry, creams, …) and subtle memories of the barrel (very light toasted, balsamic notes). In the mouth, it has a very highly integrated carbonic acid in a balanced, complex step. It emphasizes the freshness of the fruit notes combined with the notes of creaminess and ripeness. It is an easily markable cava at any time of the meal.

Mestres Clos Nostre Senyor

The first estate cava. The last drink is always the best!

New gold color. Very fine and discreet carbon. Depth and aromatic elegance: fresh notes of flowers wrapped in a creamy background, pastry and liquorice notes. The palate is dry, alive and complex. we find memories of aromatic plants, subtly smoked toasted, jams, cinnamon and all kinds of fine pastry memories fruit of the autolysis of the yeasts. Its balance vividness – complexity makes it very suitable for many different pairings.

The highest expression of Mestres

Golden colour. Carbonic present, very integrated, fruit of long aging. Intense aroma, rich in nuances acquired during its excellent evolution in the bottle: fine mustard, nuts, candied fruit, honey, fine pastry. The palate is powerful, balanced, creamy, finely spicy and glyceric. Surprise its freshness being a cava so long aging.

HARVEST 2004 "Millesimé"

Straw yellow and golden color. Carbon end and with good evolution to the cup. Very elegant cava with a great aromatic richness, where we can find a golden apple and a perfect harmony with intense and complex notes of toasted bread and nuts thanks to its long aging and noble wood. The step through the mouth is powerful, mature, balanced and very structured, with a very good integration of carbon gas. Voluminous, surrounding and velvety to the palate, it concludes in a long and very persistent finish.
